Their vegan ceviche is genius and really everything there is top notch, has surprising/brilliant flavor combinations...the chef is really top notch. That said I saw bitterballen on their Instagram recently I'm worried they may be trying to cater to the lowest common denominator, which really would be tragic. (Seriously, if all you want is botterballen, go to Febo or virtually any other Dutch bar/restaurant and leave this gem to us foodies.
