Also having run kitchens myself, i can tell you that bringing out new batches and adding to old items on the buffet is a great way to cause a foodborne illness outbreak. It's a big no-no, so much so that I felt obliged to comment.

The staff handled it by the books and we had no delay in our order which was hot and fresh. Nice job!
