I thought this was magma Didn't think this would be popular but either way here's the recipie: Cut your pork belly into cubes. Then apply a sweet rub and a spicier rub (for this i used sainsburys bbq rub and waitrose bbq rub). I then put these on a lit grill with oak wood chips to provide some smoke, make sure they are not directly over heat and are cooked using indirect heat (120°C/248°F). I left these with the indirect heat for 1 hour. Just before the one hour mark is up, get an aluminium tray and make a glaze/liquid rub. For this I used Stubbs BBQ sauce (cover the bottom of the tray with it), some more of the two previous rubs, and at least two teaspoons of demerara sugar (add more if you want a sweeter bbq flavour). Mix this all together in the tray (some duck fat may also help crisp it up but don't add too much, a teaspoon or two will do). Get the pork belly into the tray and get it covered in the mix you made. Cover the tray in thick cooking foil and once again put it in for cooking with indirect heat (120°C/248°F). Once back in and cooking, it should take 2 hours to get the same result as what is pictured. If you don't feel safe about the temperature its at, get it over direct heat to get it really hot. The result is a sweet bbq melt in the mouth pork bite which is very moreish. If I didn't have to share it I would have eaten the lot. Hope if you try it they come out just as tasty, happy cooking!
